Potato, lentil and veggie soup

I have never considered myself successful when making soups but tonight I managed to surprise myself. If also you want to make an easy and delicious winter vegetarian soup that you’ll go and pour a second round, check out the recipe 🙂

Ingredients (for 4 people):

  • 1 onion chopped
  • 1 leek, chopped
  • 5 celery sticks, chopped
  • 5 carrots, peeled and chopped
  • 10 medium size potatoes, peeled and chopped
  • 1 can of lentils
  • 1 tablespoon of tomato puree
  • 1 can chopped tomatoes with juice
  • 1 tablespoon of Hoisin sauce (optional)
  • 1 tablespoon of margarine
  • 1 liter of veggie stock
  • 1/2 liter water
  • seasoning (use according to your taste buds. Mine included salt, pepper, coriander and a pinch of brown sugar. I find that a pinch of brown sugar with tomato soups or sauces gives an especially nice taste)

My preparation:

  • melt margarine in a big pot, add the Hoisin sauce
  • add the onion, leek and celery, sautee for 5 min or until half soft
  • add carrots sautee for another 5 minutes
  • add potatoes, tomato puree, tomatoes, veggie stock and water (if necessary), spice it up according to your feelings on the specific day and let it simmer on a medium to high heat for 25 minutes
  • add lentils and let the soup simmer for another 5-10 minutes
  • pour yourself a bowl and enjoy! 🙂

Side note: a very important factor is tasting throughout the preparation process (of course, skip the raw part 🙂 ). That way you can avoid some severe mistakes in the end result 🙂

  1. ui, vēl viens jautājums – lēcas šai zupai izmanto kādas? Spriežot pēc apraksta, tādas, kas jau iepriekš termiski apstrādātas?

  2. Hoisin merce ir taisita no sijas pupinjam un vinai ir saldena garsa. Tu jauta tapec, ka LV vinas nav? Es teiktu, ka ja tu saldo ketchupu sajauc ar saldu sojas merci un pavari nedaudz kopa, kaut kas lidzigs Hoisin varetu but :))

    Par lecam: ta ka man taa bija atra pecdarba vakarinju zupa, tad izmantoju tas, kas konservetas lecas sula ir. Varetu jau it kaa pats varit un taa, bet tas daudz vairak laika aiznjem. Es vispar pedeja laika lecam piegriezu diezgan daudz veribas: gan veseligas, pilnas ar visadam barojosam vertibam, gan ari garsigas 🙂
